Corn & Tomato Salad

This was the year I decided to try and turn my black thumb into a green one. I’ve been giving my cherry tomatoes TLC every single day and I have to say, I have been enjoying the fruits of my labor! I was just as impressed as anyone when my tomato plants started growing and producing little yellow flowers that would eventually turn into plump little morsels of goodness.

My own tomatoes weren’t quite where I needed them to be so I had to resort to purchasing them from my local farmer’s market. A fresh, bright and tasty salad, that’s perfect for a hot summer picnic.

MAKING YOUR FRESH CORN & TOMATO SALAD

INGREDIENTS

5-6 ears of sweet corn
1/4 cup extra virgin olive oil
3 tbsp white wine vinegar
1 1/2 teaspoons kosher salt
Ground black pepper
1/2 teaspoon sugar
3 cups halved cherry tomatoes
8 ounces fresh bocconcini (mozzarella) cut in half
1/2 cup fresh basil leaves - torn & cut up

INSTRUCTIONS

1. Cut off the kernels of corn and place them into a bowl.

2. Make the dressing: in a small bowl, whisk together olive oil, vinegar, salt, and ground pepper to taste. Add a little sugar for a little sweetness.

3. Toss together the corn, tomatoes, cheese and dressing. Let it sit for about 10 minutes or so and let all the flavors marinate.

4. Add basil in right at the end!
