Green Graze Sandwiches

One of the best sandwiches I’ve ever had was on the island of Oahu in this tiny sandwich shop on the North Shore. I was only 16 or so at the time but it was definitely memorable. What I loved about it was the freshness of the sandwich. When a sandwich is so fresh you feel like you don’t even need any meat to bring out extra flavor, that’s how you know it’s really fresh.

This green goddess sandwich is full of flavor - one of the best parts is the unique sauce. You’ll definitely want to be spreading that sauce on everything. A simple and yet fresh sandwich that’s perfect for any quick lunch time meal! We packed ours up for our covid-friendly picnic and it was the perfect amount of food to satisfy our hunger!

MAKING YOUR GREEN GRAZE SANDWICH

Makes: 4-6 sandwiches
Prep Time: 15 minutes

INGREDIENTS

GREEN GODDESS MAYONNAISE:
1/3 cup packed basil leaves
1/3 cup packed chopped chives
2 medium-large garlic cloves
2 anchovy filets
zest and juice of 1/2 a lemon
1/4 teaspoon salt
1/2 cup mayonnaise

PER SANDWICH INGREDIENTS:
2 slices of sandwich bread
1/2 a small ripe avocado
2 slices of fresh mozzarella
1 medium-sized heirloom tomato
2-3 thin slices Persian cucumbers
handful of sprouts
2 butter lettuce leaves

INSTRUCTIONS

MAKING THE GREEN GRAZE MAYONNAISE:

1. In the bowl of a food processor, combine all ingredients except for the lemon juice in a food processor.

2. Puree until it’s smooth, scraping down the sides of the bowl as needed. Blend in the lemon juice and chill in the fridge while you assemble the sandwiches.

ASSEMBLING THE SANDWICH:

1. Toast the breach and spread both slices of toast with a thick layer of the graze mayonnaise that you’ve chilled in the fridge.

2. Top one of the sides with lettuce.

3. Add your slices of heirloom tomato on top of the lettuce.

4. Add your slices of cucumber on top of the tomato and add the avocado slices to the other side.

5. Add sprouts on top of the cucumbers and add your fresh mozzarella on top of the avocado.

6. Put both sides together to assemble the sandwich.

7. Wrap in parchment and slice in half to show the beautiful side profile of this beautiful sandwich.
